Why We Like It
This is a true bucket-list dining experience. At their part-time home in Andover, Vermont, about 100 miles northwest of their buzzy Somerville Peruvian place, Celeste, Maria Rondeau and JuanMa Calderón stage a weekend pachamanca: a feast of meats, vegetables, and humitas (steamed corn cakes) cooked underground between hot stones — a tradition dating back to the Incas.

About Esmeralda

Esmeralda is an experimental restaurant from Maria Rondeau and JuanMa Calderón of Celeste, hosted in their Vermont home. Rondeau and Calderón create shared culinary experiences that merge local and Latin American flavors, sounds and culture.
