Though namesake and founder Shiro Kashiba is no longer associated with this downtown hotspot (find him instead at Sushi Kashiba at Pike Place Market) his Edomae-style sushi lives on as a Seattle benchmark. Order the freshest cuts as nigiri by the piece (keep an eye especially on the day’s specials from Japan, like house-smoked king mackerel or buttery sea urchin), or simply turn yourself over to the omakase: the chef’s-choice coursed menu includes 18 pieces of sushi, and you’re guaranteed to experience the restaurant’s greatest hits.

**Sushi Bar reservation times are 4:30pm, 6:45pm and 8:45pm. If you do not see the Sushi bar option, there is no availability for the time. We only offer Omakase, a set course menu. We request all guests order this course menu. Serving in Belltown for a quarter of a century Shiro's Sushi is the first Edomae Sushi restaurant in Seattle. Our masterful chefs at Shiro’s Sushi focus on local, seasonally available seafood and produce. From the vantage point of our clean, seafood-rich waters, Shiro’s Sushi chefs look first to what is available in Washington and Oregon: salmon, geoduck, squid, oysters, clams, smelt and Pacific albacore tuna; regionally, such as king crab from Alaska and wild prawns from Canada, followed by acquiring fresh fish from global waters.
